Exposure to light initiates a rapid degradation of chlorophyll, the pigment responsible for matcha's signature vibrant green colour. As chlorophyll breaks down, the matcha visibly dulls, shifting from a brilliant emerald to a muted, yellowish-brown. More importantly, light exposure also hastens the breakdown of delicate aroma compounds and antioxidants, leading to a noticeable loss of its characteristic fresh, grassy notes and a potential increase in bitterness.
